Beef Rogan Josh - Indian Comfort Food

Ingredients:

  • 1 pound beef stew meat
  • 1 cup plain yogurt
  • 3 garlic cloves
  • 2 inches ginger root
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 cup water
  • 2 tbsp vegetable oil
  • 2 large onions
  • 1 cinnamon stick
  • 2 bay leaves
  • 6 cardamom pods
  • to serve basmati rice, cooked

Instructions:

  1. In a large bowl, mix together yogurt, grated garlic and ginger, cumin, paprika, cayenne, coriander, and turmeric. Add the beef and stir until well coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until browned, about 10 minutes.
  3. Add the marinated beef, cinnamon stick, bay leaves, and cardamom pods to the pot. Stir well to combine.
  4. Add water to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
  5. Remove the bay leaves, cinnamon stick, and cardamom pods before serving.
  6. Serve the Beef Rogan Josh over basmati rice.
