Beef Rogan Josh - Indian Comfort Food

Ingredients:
- 1 pound beef stew meat
- 1 cup plain yogurt
- 3 garlic cloves
- 2 inches ginger root
- 1 tsp ground cumin
- 1 tsp paprika
- 0.5 tsp cayenne pepper
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1 cup water
- 2 tbsp vegetable oil
- 2 large onions
- 1 cinnamon stick
- 2 bay leaves
- 6 cardamom pods
- to serve basmati rice, cooked
Instructions:
- In a large bowl, mix together yogurt, grated garlic and ginger, cumin, paprika, cayenne, coriander, and turmeric. Add the beef and stir until well coated. Marinate in the refrigerator for at least 2 hours, or preferably overnight.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until browned, about 10 minutes.
- Add the marinated beef, cinnamon stick, bay leaves, and cardamom pods to the pot. Stir well to combine.
- Add water to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
- Remove the bay leaves, cinnamon stick, and cardamom pods before serving.
- Serve the Beef Rogan Josh over basmati rice.
