Beef Congee - Chinese Style

Ingredients:

  • 500 grams Beef Brisket
  • 1 cup Jasmine rice
  • 2 inch piece Fresh ginger
  • 2 stalks Green onions
  • 8 cups Water
  • 1.5 teaspoon Salt
  • 1 tablespoon Soy sauce
  • to taste White pepper
  • for serving Fried onion
  • for serving Cilantro

Instructions:

  1. Firstly, rinse the jasmine rice under cold water until the water runs clear. Then soak the rice in water for 20 minutes and drain.
  2. Cut the brisket into large chunks. Slice the ginger into thin slices.
  3. In a large pot, combine the water, beef brisket, ginger, and salt. Bring this to a boil over high heat.
  4. When it starts boiling, reduce the heat to low, cover the pot and let it simmer for 1.5 hours, or until the brisket is tender.
  5. Remove the brisket from the pot and shred it into thin strips. Set aside.
  6. Now, add the soaked and drained rice to the pot and continue simmering for another 30-40 minutes, stirring occasionally. The result should be a thick and creamy congee.
  7. Add the shredded brisket back into the pot, along with the soy sauce. Stir well and cook for an additional 10 minutes.
  8. Season with white pepper according to your preferences.
  9. Before serving, slice the green onions thinly. Scoop the congee into bowls and sprinkle with fresh cilantro, green onions and fried onions.
