Beef Congee - Chinese Style

Ingredients:
- 500 grams Beef Brisket
- 1 cup Jasmine rice
- 2 inch piece Fresh ginger
- 2 stalks Green onions
- 8 cups Water
- 1.5 teaspoon Salt
- 1 tablespoon Soy sauce
- to taste White pepper
- for serving Fried onion
- for serving Cilantro
Instructions:
- Firstly, rinse the jasmine rice under cold water until the water runs clear. Then soak the rice in water for 20 minutes and drain.
- Cut the brisket into large chunks. Slice the ginger into thin slices.
- In a large pot, combine the water, beef brisket, ginger, and salt. Bring this to a boil over high heat.
- When it starts boiling, reduce the heat to low, cover the pot and let it simmer for 1.5 hours, or until the brisket is tender.
- Remove the brisket from the pot and shred it into thin strips. Set aside.
- Now, add the soaked and drained rice to the pot and continue simmering for another 30-40 minutes, stirring occasionally. The result should be a thick and creamy congee.
- Add the shredded brisket back into the pot, along with the soy sauce. Stir well and cook for an additional 10 minutes.
- Season with white pepper according to your preferences.
- Before serving, slice the green onions thinly. Scoop the congee into bowls and sprinkle with fresh cilantro, green onions and fried onions.
