
Beef Braciole: Italian Comfort Food for Midnight Cravings

Ingredients:
- 1/2 pound beef flank steak or beef round
- 2 cloves garlic
- 2 tablespoons fresh parsley
- 1/4 cup grated parmesan cheese
- 1/4 cup breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1/2 cup red wine
- 14.5 oz canned crushed tomatoes
Instructions:
- Flatten the steak to a thickness of 1/4 inch. If using round beef, cut it into 2 pieces.
- Finely chop the garlic and parsley and mix them with the cheese, breadcrumbs, salt and pepper.
- Spread this mix over the beef, roll it tight and secure with string or toothpicks.
- In a skillet, heat the olive oil over medium heat. Add beef and brown on all sides.
- Pour in the red wine and allow it to simmer for a few minutes until slightly reduced.
- Add the crushed tomatoes and reduce to low heat. Cover and simmer for about an hour and a half, until beef is tender.
- Allow the braciole to rest for a few minutes before removing the string or toothpicks. Slice it into rounds to serve.
