Beef Bourguignon Breakfast Croissant

Ingredients:

  • 2 lb Chuck beef
  • 1.5 cups Red wine
  • 2 sprigs Fresh thyme
  • 2 leaves Bay leaves
  • 2 whole Carrots
  • 2 cloves Garlic cloves
  • 2 cups Pearl onions
  • 100 g Smoked bacon
  • 1 tbs Plain flour
  • 4 whole Butter croissants
  • to taste Salt and pepper

Instructions:

  1. 1. Preheat the oven to 160C/320F.
  2. 2. Cut the beef into large chunks and season with salt and pepper.
  3. 3. Fry the beef in a large oven-safe casserole dish with some olive oil until browned on all sides.
  4. 4. Remove the beef from the dish and set aside. Add the diced onions, chopped carrots, and crushed garlic to the dish and sauté until soft.
  5. 5. Add the flour to the dish and stir well, then add the red wine and mix until a thick sauce forms.
  6. 6. Add the beef back into the dish, add the thyme, bay leaves, and smoked bacon. Stir well, then cover and transfer to the oven for about 3 hours, until the beef is tender.
  7. 7. In the last 5 minutes, prepare the croissants by slicing them open and warming them in the oven.
  8. 8. Once the beef is done, spoon the beef bourguignon into the warm croissants and serve immediately.
