Beef Bourguignon

Ingredients:

  • 1.5 pounds Beef chuck
  • 4 slices Bacon
  • 2 medium Carrots
  • 2 medium Yellow onions
  • 2 Garlic cloves
  • 1 tbsp Thyme
  • 2 Bay leaves
  • 1 Bottle of red wine
  • 2 cups Beef broth
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Olive Oil

Instructions:

  1. 1. Preheat the oven to 275 degrees.
  2. 2. In a large oven-proof pot, cook the bacon over medium heat until it's well done. Remove the bacon and set it aside, leaving the fat in the pot.
  3. 3. Cut the beef into 2-inch chunks and season with salt and pepper. Add the beef to the pot and brown on all sides. Remove the beef and set it aside.
  4. 4. In the same pot, add the carrots and onions. Saute until they begin to caramelise then add the garlic, thyme, and bay leaves.
  5. 5. Add the wine and broth to the pot and bring to a simmer. Add the beef and bacon back into the pot.
  6. 6. Cover the pot and place it in the oven for 3 hours.
  7. 7. After 3 hours, remove from the oven and serve with toast or potatoes.
