Beef Bourguignon

Ingredients:
- 1.5 pounds Beef chuck
- 4 slices Bacon
- 2 medium Carrots
- 2 medium Yellow onions
- 2 Garlic cloves
- 1 tbsp Thyme
- 2 Bay leaves
- 1 Bottle of red wine
- 2 cups Beef broth
- to taste Salt
- to taste Pepper
- 2 tbsp Olive Oil
Instructions:
- 1. Preheat the oven to 275 degrees.
- 2. In a large oven-proof pot, cook the bacon over medium heat until it's well done. Remove the bacon and set it aside, leaving the fat in the pot.
- 3. Cut the beef into 2-inch chunks and season with salt and pepper. Add the beef to the pot and brown on all sides. Remove the beef and set it aside.
- 4. In the same pot, add the carrots and onions. Saute until they begin to caramelise then add the garlic, thyme, and bay leaves.
- 5. Add the wine and broth to the pot and bring to a simmer. Add the beef and bacon back into the pot.
- 6. Cover the pot and place it in the oven for 3 hours.
- 7. After 3 hours, remove from the oven and serve with toast or potatoes.
