Baked Vegetable Medley

Ingredients:

  • 2 whole Bell peppers
  • 2 whole Zucchinis
  • 2 whole Carrots
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano

Instructions:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Wash and chop the bell peppers, zucchinis, and carrots into bite-sized pieces.
  3. Place the vegetables on a large baking sheet.
  4. Drizzle the olive oil over the vegetables, then sprinkle the salt, black pepper, dried basil, and dried oregano evenly over top.
  5. Use your hands to toss the vegetables until they are evenly coated with the oil and seasonings.
  6. Bake the vegetables in the preheated oven for 30 minutes, or until they are tender and slightly browned.
