Baked Italian Chicken with Summer Vegetables

Ingredients:

  • 4 pieces Chicken breasts
  • 2 medium Zucchini
  • 2 medium Tomatoes
  • 1 large Bell peppers
  • 3 pieces Garlic cloves
  • 3 tablespoons Olive oil
  • 1 handful Fresh basil leaves
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Chop the zucchini, tomatoes, and bell pepper into bite-sized pieces.
  3. Peel and mince the garlic cloves.
  4. In a large bowl, combine chicken, chopped vegetables, minced garlic, olive oil, salt, and pepper. Toss until everything is evenly coated.
  5. Spread out the chicken and vegetables onto a baking dish in a single layer.
  6. Bake for 30-40 minutes, or until chicken is cooked through and vegetables are tender.
  7. Sprinkle fresh basil leaves over the dish just before serving.
