
Baked Italian Breakfast Chicken

Ingredients:
- 4 pieces Chicken breasts
- 2 teaspoons Italian seasoning mix
- 2 cloves Garlic
- 2 tablespoons Olive oil
- To Taste Salt
- To Taste Black pepper
- 2 cups Tomatoes
- 1 cup Mozzarella cheese
- 1 bunch Basil
- 8 pieces Eggs
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C).
- Rub the chicken with olive oil, garlic, Italian seasoning, salt, and pepper and place on baking tray.
- Bake the chicken in the preheated oven for 10 minutes.
- Meanwhile, roughly chop the tomatoes, mozzarella, and basil.
- Take out the partially cooked chicken and add chopped tomatoes and mozzarella on top. Return to oven for another 10 minutes.
- Break the eggs one at a time and carefully place on top of the chicken and cheese, spread equally. Return the tray to the oven.
- Bake for another 15-20 minutes or until the eggs are cooked to your liking.
- Garnish with fresh basil before serving.
