Baked Fish Tacos

Ingredients:

  • 4 pieces White fish fillets
  • 2 tablespoons Olive oil
  • 1 piece Lime
  • 2 cups Cabbage
  • 2 pieces Carrots
  • 8 pieces Whole grain tortillas
  • 1 cup Low-fat Greek yogurt
  • 1 handful Fresh cilantro
  • to taste Salt and pepper

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Arrange fish on a baking sheet. Drizzle with olive oil and squeeze the juice of the lime over the top. Season with salt and pepper.
  3. Bake in the preheated oven until fish flakes easily with a fork, about 10-15 minutes.
  4. While the fish is cooking, shred the cabbage and grate the carrots. Mix them together in a bowl.
  5. Warm the tortillas in the oven for about 2 minutes.
  6. Spread Greek yogurt on each tortilla. Add the cabbage and carrot mix. Top with baked fish and garnish with fresh cilantro.
  7. Serve the fish tacos immediately and enjoy your healthy snack.
