
Baked Fish Tacos

Ingredients:
- 4 pieces White fish fillets
- 2 tablespoons Olive oil
- 1 piece Lime
- 2 cups Cabbage
- 2 pieces Carrots
- 8 pieces Whole grain tortillas
- 1 cup Low-fat Greek yogurt
- 1 handful Fresh cilantro
- to taste Salt and pepper
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- Arrange fish on a baking sheet. Drizzle with olive oil and squeeze the juice of the lime over the top. Season with salt and pepper.
- Bake in the preheated oven until fish flakes easily with a fork, about 10-15 minutes.
- While the fish is cooking, shred the cabbage and grate the carrots. Mix them together in a bowl.
- Warm the tortillas in the oven for about 2 minutes.
- Spread Greek yogurt on each tortilla. Add the cabbage and carrot mix. Top with baked fish and garnish with fresh cilantro.
- Serve the fish tacos immediately and enjoy your healthy snack.
