
Baked Chicken Strips Salad

Ingredients:
- 400 grams chicken breast
- 1 cup whole wheat bread crumbs
- 3 tablespoon olive oil
- 1 piece egg
- 1 bunch lettuce
- 1 piece cucumber
- 2 piece tomato
- 10 piece olives
- 100 grams low-fat feta cheese
- 4 tablespoon light dressing
Instructions:
- Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Cut the chicken breast into thin strips.
- Beat the egg in a bowl. In another bowl, add the whole wheat breadcrumbs.
- Dip each chicken strip into the egg then coat with breadcrumbs. Place on a baking tray.
- Drizzle olive oil over the chicken strips.
- Bake in the preheated oven for about 20-30 minutes until crispy and cooked.
- While the chicken is baking, prepare your salad. Chop lettuce, cucumber, tomato, and olives.
- Place the salad mixture in a bowl, add the baked chicken strips on top, sprinkle with feta cheese and drizzle with your favorite light dressing.
- Serve immediately.
