Baked Chicken Strips Salad

Ingredients:

  • 400 grams chicken breast
  • 1 cup whole wheat bread crumbs
  • 3 tablespoon olive oil
  • 1 piece egg
  • 1 bunch lettuce
  • 1 piece cucumber
  • 2 piece tomato
  • 10 piece olives
  • 100 grams low-fat feta cheese
  • 4 tablespoon light dressing

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Cut the chicken breast into thin strips.
  3. Beat the egg in a bowl. In another bowl, add the whole wheat breadcrumbs.
  4. Dip each chicken strip into the egg then coat with breadcrumbs. Place on a baking tray.
  5. Drizzle olive oil over the chicken strips.
  6. Bake in the preheated oven for about 20-30 minutes until crispy and cooked.
  7. While the chicken is baking, prepare your salad. Chop lettuce, cucumber, tomato, and olives.
  8. Place the salad mixture in a bowl, add the baked chicken strips on top, sprinkle with feta cheese and drizzle with your favorite light dressing.
  9. Serve immediately.
