Baked Chicken Frittata

Ingredients:

  • 1 whole Chicken breast
  • 6 large Eggs
  • 1/3 cup Milk
  • 1/2 cup Parmesan cheese
  • 1 tbsp Basil
  • 1 tsp Oregano
  • 2 tsp Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the chicken breast into small cubes. Heat the olive oil in a pan over medium heat, and cook the chicken until no longer pink. Set aside to cool.
  3. In a large bowl, whisk together the eggs, milk, Parmesan cheese, basil, oregano, salt, and pepper.
  4. Stir in the cooled chicken. Pour the mixture into a greased baking dish.
  5. Bake for 35-45 minutes, until the frittata is set in the center and lightly browned on top.
  6. Remove from the oven and let it cool for a few minutes before slicing.
  7. Serve the frittata warm, with toasted bread and a side salad if desired.
