Baja Breakfast Tacos with Fish

Ingredients:

  • 4 pieces white fish fillets
  • 1 whole lime
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 8 pieces corn tortillas
  • 1 whole avocado
  • 1/4 cup red onion
  • 1/4 cup cilantro
  • 1 whole tomato
  • 1/4 cup sour cream
  • 4 whole eggs
  • 1/4 teaspoon chili powder

Instructions:

  1. Start by seasoning the fish fillets with cumin, paprika, chili powder, and the juice from the lime. Leave them to marinate for 15 minutes.
  2. While the fish is marinating, prepare the salsa by dicing the avocado, tomato, and red onion, and mixing them together with the cilantro.
  3. Heat a pan over medium heat and cook the fish fillets for 2-3 minutes on each side, or until they're cooked through. Remove from the pan and set aside.
  4. In the same pan, scramble the eggs until they're just set.
  5. To assemble the tacos, lay a tortilla flat and spread a spoonful of sour cream onto it. Then, layer on some of the scrambled eggs, a fish fillet, and top it off with a generous scoop of salsa.
