
Baja Breakfast Tacos with Fish

Ingredients:
- 4 pieces white fish fillets
- 1 whole lime
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 8 pieces corn tortillas
- 1 whole avocado
- 1/4 cup red onion
- 1/4 cup cilantro
- 1 whole tomato
- 1/4 cup sour cream
- 4 whole eggs
- 1/4 teaspoon chili powder
Instructions:
- Start by seasoning the fish fillets with cumin, paprika, chili powder, and the juice from the lime. Leave them to marinate for 15 minutes.
- While the fish is marinating, prepare the salsa by dicing the avocado, tomato, and red onion, and mixing them together with the cilantro.
- Heat a pan over medium heat and cook the fish fillets for 2-3 minutes on each side, or until they're cooked through. Remove from the pan and set aside.
- In the same pan, scramble the eggs until they're just set.
- To assemble the tacos, lay a tortilla flat and spread a spoonful of sour cream onto it. Then, layer on some of the scrambled eggs, a fish fillet, and top it off with a generous scoop of salsa.
