Authentic Mexican Enchiladas

Ingredients:

  • 12 pieces corn tortillas
  • 2 cups enchilada sauce
  • 2.5 cups cooked shredded chicken
  • 2 cups shredded cheese
  • 1 cup chopped onions
  • to garnish chopped fresh cilantro

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat the tortillas in a skillet over medium heat, then dip each one in enchilada sauce to lightly coat them.
  3. Place some shredded chicken and onions in the center of each tortilla, then sprinkle some cheese on top. Roll the tortillas and place them seam-side-down in a baking dish.
  4. Pour the remaining enchilada sauce over the tortillas in the dish, then sprinkle the remaining cheese on top.
  5. Bake the enchiladas for 20 minutes, or until the cheese is bubbly and lightly browned.
  6. Garnish with fresh cilantro before serving. Enjoy your authentic Mexican enchiladas!
