Ingredients:
- 12 pieces corn tortillas
- 2 cups enchilada sauce
- 2.5 cups cooked shredded chicken
- 2 cups shredded cheese
- 1 cup chopped onions
- to garnish chopped fresh cilantro
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Heat the tortillas in a skillet over medium heat, then dip each one in enchilada sauce to lightly coat them.
- Place some shredded chicken and onions in the center of each tortilla, then sprinkle some cheese on top. Roll the tortillas and place them seam-side-down in a baking dish.
- Pour the remaining enchilada sauce over the tortillas in the dish, then sprinkle the remaining cheese on top.
- Bake the enchiladas for 20 minutes, or until the cheese is bubbly and lightly browned.
