Authentic Mexican Carnitas

Ingredients:
- 2 kg Pork shoulder
- Enough to cover the pork Water
- 1 Whole White onion
- 4 Cloves Garlic
- 1 tbsp Salt
- 2 tsp Cumin
- 2 tsp Oregano
- 2 Leaves Bay leaves
- 1 Cup Orange juice
Instructions:
- Cut the pork shoulder into large chunks, removing any excess fat.
- Place the pork in a large pot with the onion, garlic, salt, cumin, oregano, and bay leaves. Cover with water.
- Bring the pot to a boil, then reduce the heat and simmer, uncovered, for 2 hours.
- After 2 hours, add the orange juice to the pot. Continue to simmer for another hour, or until the pork is very tender.
- Preheat your oven to 200 degrees C.
- Transfer the pork to a roasting pan, and bake in the oven for 20-30 minutes, until the pork is crispy and golden.
- Serve the carnitas with tortillas and your favorite toppings, such as salsa, guacamole, and cilantro.
