Authentic Mexican Carnitas

Ingredients:

  • 2 kg Pork shoulder
  • Enough to cover the pork Water
  • 1 Whole White onion
  • 4 Cloves Garlic
  • 1 tbsp Salt
  • 2 tsp Cumin
  • 2 tsp Oregano
  • 2 Leaves Bay leaves
  • 1 Cup Orange juice

Instructions:

  1. Cut the pork shoulder into large chunks, removing any excess fat.
  2. Place the pork in a large pot with the onion, garlic, salt, cumin, oregano, and bay leaves. Cover with water.
  3. Bring the pot to a boil, then reduce the heat and simmer, uncovered, for 2 hours.
  4. After 2 hours, add the orange juice to the pot. Continue to simmer for another hour, or until the pork is very tender.
  5. Preheat your oven to 200 degrees C.
  6. Transfer the pork to a roasting pan, and bake in the oven for 20-30 minutes, until the pork is crispy and golden.
  7. Serve the carnitas with tortillas and your favorite toppings, such as salsa, guacamole, and cilantro.
