American Style Roadkill Chili

Ingredients:
- 2 pounds Roadkill meat (Deer/Possum/Raccoon), cleaned and cut into cubes
- 1 large Onion, chopped
- 1 medium Green bell pepper, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Tomato paste
- 1 can Canned kidney beans, drained
- 2 cups Beef broth
- 1 tablespoon Chili powder
- 1 teaspoon Ground cumin
- to taste Salt and pepper
Instructions:
- 1. In a large stockpot over medium heat, cook the roadkill meat until browned, about 10 minutes. Remove the meat and set aside.
- 2. In the same pot, add the onion, bell pepper, and garlic. Cook until vegetables are softened, about 5 to 7 minutes.
- 3. Stir in the tomato paste and spices, and cook for another couple of minutes until fragrant.
- 4. Add the roadkill meat back to the pot along with the kidney beans and beef broth. Season with salt and pepper.
- 5. Bring the chili to a simmer. Cover and cook for about 2 hours, stirring occasionally, until the chili is thickened and the meat is tender.
- 6. Serve the chili with your favorite toppings such as grated cheese, sour cream, and scallions.
