American Style Roadkill Chili

Ingredients:

  • 2 pounds Roadkill meat (Deer/Possum/Raccoon), cleaned and cut into cubes
  • 1 large Onion, chopped
  • 1 medium Green bell pepper, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Tomato paste
  • 1 can Canned kidney beans, drained
  • 2 cups Beef broth
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • to taste Salt and pepper

Instructions:

  1. 1. In a large stockpot over medium heat, cook the roadkill meat until browned, about 10 minutes. Remove the meat and set aside.
  2. 2. In the same pot, add the onion, bell pepper, and garlic. Cook until vegetables are softened, about 5 to 7 minutes.
  3. 3. Stir in the tomato paste and spices, and cook for another couple of minutes until fragrant.
  4. 4. Add the roadkill meat back to the pot along with the kidney beans and beef broth. Season with salt and pepper.
  5. 5. Bring the chili to a simmer. Cover and cook for about 2 hours, stirring occasionally, until the chili is thickened and the meat is tender.
  6. 6. Serve the chili with your favorite toppings such as grated cheese, sour cream, and scallions.
