American Breakfast Chicken Hash

Ingredients:

  • 2 pieces Chicken Breast
  • 4 medium size Potatoes
  • 1 medium size Onion
  • 2 pieces Bell peppers
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon Paprika
  • 4 pieces Eggs

Instructions:

  1. Dice the chicken, potatoes, onion, and bell peppers into small pieces, and finely chop the garlic.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until no longer pink, then remove and set aside.
  3. In the same skillet, add the onions, bell peppers, and potatoes, cooking until the vegetables are tender and the potatoes are golden brown.
  4. Return the chicken to the skillet and add the garlic, salt, pepper, and paprika, stirring to thoroughly combine.
  5. Make four wells in the hash. Break an egg into each well, season with a little more salt and pepper if desired.
  6. Cover the skillet and cook over medium heat until the eggs are to your desired level of doneness.
