
American Breakfast Chicken Hash

Ingredients:
- 2 pieces Chicken Breast
- 4 medium size Potatoes
- 1 medium size Onion
- 2 pieces Bell peppers
- 2 tablespoons Olive oil
- 2 cloves Garlic
- to taste Salt
- to taste Black pepper
- 1 teaspoon Paprika
- 4 pieces Eggs
Instructions:
- Dice the chicken, potatoes, onion, and bell peppers into small pieces, and finely chop the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until no longer pink, then remove and set aside.
- In the same skillet, add the onions, bell peppers, and potatoes, cooking until the vegetables are tender and the potatoes are golden brown.
- Return the chicken to the skillet and add the garlic, salt, pepper, and paprika, stirring to thoroughly combine.
- Make four wells in the hash. Break an egg into each well, season with a little more salt and pepper if desired.
- Cover the skillet and cook over medium heat until the eggs are to your desired level of doneness.
