American Breakfast Beef Hash

Ingredients:

  • 1 pound beef roast, pre-cooked
  • 2 medium russet potatoes
  • 1 medium onion
  • 1 medium green bell pepper
  • 3 tablespoons olive oil
  • 4 large eggs
  • to taste salt
  • to taste black pepper

Instructions:

  1. 1. Dice the cooked beef roast, potatoes, onion, and bell pepper into small, bite-sized pieces.
  2. 2. Heat the olive oil in a large skillet over medium heat.
  3. 3. Add the potatoes to the skillet and cook until browned and crisp, about 15 minutes.
  4. 4. Add the diced onion and bell pepper to the skillet and continue to cook until the vegetables are softened, about 5 minutes.
  5. 5. Stir in the diced beef and cook until heated through, about 5 minutes.
  6. 6. Make four wells in the hash and crack an egg into each one. Cover the skillet and cook until the eggs are cooked to your liking.
  7. 7. Season with salt and pepper to taste, then serve hot.
