
American Breakfast Beef Hash

Ingredients:
- 1 pound beef roast, pre-cooked
- 2 medium russet potatoes
- 1 medium onion
- 1 medium green bell pepper
- 3 tablespoons olive oil
- 4 large eggs
- to taste salt
- to taste black pepper
Instructions:
- 1. Dice the cooked beef roast, potatoes, onion, and bell pepper into small, bite-sized pieces.
- 2. Heat the olive oil in a large skillet over medium heat.
- 3. Add the potatoes to the skillet and cook until browned and crisp, about 15 minutes.
- 4. Add the diced onion and bell pepper to the skillet and continue to cook until the vegetables are softened, about 5 minutes.
- 5. Stir in the diced beef and cook until heated through, about 5 minutes.
- 6. Make four wells in the hash and crack an egg into each one. Cover the skillet and cook until the eggs are cooked to your liking.
- 7. Season with salt and pepper to taste, then serve hot.
